Blueberry Muffins with Cinnamon Glazed Walnuts

About the Recipe



-2 cups all-purpose flour

-2 tsp baking powder

-1/2 tsp salt

-1/2 cup butter, melted

-3/4 cup granulated sugar

-2 large eggs

-1 tsp vanilla extract

-3/4 cup milk

-2 cups fresh or frozen blueberries


-2/3 cup all-purpose flour

-1/3 cup granulated sugar

-1/4 cup butter, softened

-1/4 cup chopped Valley Grown Cinnamon Glazed Walnuts


  1. Heat oven to 375°F. Line a muffin tin with baking cups or grease the pan with non-stick cooking spray.

  2. In a medium bowl, mix together the flour, baking powder, and salt. Set aside.

  3. In a large bowl, mix together your melted butter, sugar, eggs, milk, and vanilla. Mix well.

  4. Slowly add the flour mixture into the wet mixture and stir until just combined. Fold in your blueberries.

  5. Fil each baking tin 3/4 full of your batter.

  6. Mix together your streusel topping in a small bowl with a fork until combined, the mixture will be crumbly.

  7. Sprinkle about 1 tbsp of the streusel on top of each muffin.

  8. Bake for 22-25 minutes, or until the muffins come out clean with a toothpick. Cool for 5-10 minutes before transferring to wire rack to cool.
