Ingredients
1 cup mashed ripe bananas (about 2 large)
¾ cup pumpkin purée
½ cup melted butter or oil
¾ cup brown sugar (or ½ cup if you like it less sweet)
2 eggs
1 tsp vanilla extract
1¾ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
½ cup chopped Valley Grown Walnuts
Preparation
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, whisk together bananas, pumpkin, butter, sugar, eggs, and vanilla.
In another bowl, combine flour, baking soda, baking powder, salt, and spices.
Mix wet and dry ingredients just until combined. Fold in walnuts.
Pour into pan, top with a few extra walnuts, and bake for 50–60 minutes or until a toothpick comes out clean.
Let cool before slicing (if you can wait!).
