Watermelon Walnut Salad

About the Recipe

Ingredients

  • 5 cups watermelon, chopped and diced

  • 2 medium cucumbers, cut into fours.

  • 6-8 ounces blueberries, or blackberries

  • 1/3 cup roasted, and cooled, chopped Valley Grown Walnuts

  • 3-4 ounces Feta Cheese

  • Lime juice, from two limes


  • 2 tbsp olive oil

  • Pinch of salt

  • 1 tbsp Chili lime seasoning

  • Chopped fresh mint



Preparation

  1. Dice your watermelon into cubes and add them to a large bowl

  2. Add your blueberries, feta, walnuts, cucumber, lime juice, salt, seasoning, mint and olive oil.

  3. Mix all your ingredients carefully, without crushing the watermelon.

  4. Serve and ENJOY!
